Iraqi Roast Chicken by Christiane Amanpour
I found this recipe in the my favourite Book "Share" the cookbook that celebrate out common humanity. The title grabbed my attention and one which I believe in every much.

Heres a great Iraqi chicken recipe which I make for my friends who are not so keen on spices. Enjoy!
PREP TIME | COOK TIME | TOTAL TIME

THE SHOPPING LIST
2kg organic chicken with skin
glugs of good cooking Olive oil
garlic – 1 bulb cut halved
2 lemons halved
sea salt to taste
freshly ground black pepper
50 g of softened butter
a few sprigs of rosemary chopped
HOW TO COOK IT:
Mix the butter and rosemary and season well
Put your hand under the skin and rub in the mixture.
Rub the chicken with the olive oil and the juice of lemon.
Then add the squeezed lemon in the capita of the chicken along with the garlic.
Season with sea slat and black pepper and place on a roasting tray.
Roast on a pre heated oven of 180C.
Roast until the juice run clear and there is no pink meat.
SERVE WITH: A green salad or roasted potatoes
